Awesome to see 2 Huntsville area breweries in the top 15! Rocket republic makes some solid beers. But very excited to see us beating out breweries like New Belgium, Victory, Ommengang, St. Bernardus …
I’m making a La Fin du Monde clone attempt in a couple months, stepping up the dregs of La Fin bottles to try to get the most authentic results, but also splitting the batch to try out Lallemand Abbaye. I’d be interested to hear if you have any thoughts on these two yeasts, and if you’re willing, what yeast you use.
I honestly haven’t used either of those and the yeast I use now is WY1214 and that is because I always have so much of it available. I used to use WY3787 when I homebrewed my tripels.
Glad to see that Yella Hammer beer in among other beers that I’ve tasted and appreciated. It adds credence to the rankings. You are in good company, Kieth!
Dave, I’m interested to hear your results. I love the Unibroue strain, but I’ve only ever used the Wyeast version. I’ve never stepped it up from dregs. Have you considered using Blanche de Chambly for the dregs instead of La Fin? It’s only 5%, so I’m thinking that the yeast is probably in better shape.
I hadn’t considered that. Not a bad idea. Except I think I’ll only buy La Fin, because I friggin love it. Plus I’ll save a bottle so after I make my own I can do a side-by-side comparison to see what’s similar & different.
My point is had the author just have rated his “favorite” tripels there would be absolutely no credence to the article (unless the author is someone like Michael Jackson). And I have very little faith for social media beer ratings which are either based on total hype or, in the case of untappd, idiotic people who post crap like “This kolsch is not what I was in the mood for, which is a IIPA… 1 star”.
Straffe Hendricks make some good beers. yeah, maybe a little surprised to see them as #1 but not really surprised to see it in top 15. I think the point is that the 15 beers mentioned on the list are all pretty solid versions of the style.
I personally prefer Coppertail tripel, out of FLA, over my own (it is extremely yeast-spice forward) but I don’t think that beer was even judged, other wise I may be at #9 instead of 8. And freshness probably had a lot to do with some of the Belgian beers on the list not making the top 15. But, hey, that’s all part of it. If you can’t deliver a fresh product that’s on you.
