An IPA in 10 days?

I need to brew an IPA for a July 4th party, but that’s on hold until after HomeBrew Con. I’ll have about 10 Days once I return from Asheville. Is this doable or should I give up on the IPA and brew a pale ale or something?

I was in a similar situation for a last minute wedding request and brewed a pale ale from grain to glass in about 8-9 days using Kivek yeast. It was a recipe from a brew club member that regularly brews it and it came out suprisingly well. I will be at HomeBrew Con so maybe we can meet up?

Sounds good Greg. I am not a particular fan of kviek but this may be an option.

If you pull some tricks out of the bag I can see an IPA ready in 10 days. Shoot for the lower end of the ABV range, use a high floc fast fermenting strain towards the upper temp limit, use clarifier (if your crowd wants clear beer), and crank up the CO2 for carbonation. I can see that happening.

rack over and condition 4 days

Move to cooler wait 2 days and dispense

I don’t know about forced carb but my primed beers have carbonation after 4 days

After discussing this dilemma with Josh Weikert at Homebrew Con, I ended up with a Kolsch fermented with US-05 and whirlpooled with Hersbrucker hops. I brewed it today and we’ll see how it turns out!
