I was looking at the Stocks Farm website and saw a description for Phoenix hops: “Phoenix is an unusual hop. It’s aroma notes are chocolate, molasses and spice and it is excellent for dark beers, stouts and porters.” This sounds like it would be delicious in my Baltic Porter. Does anyone have any experience with this or similar varieties?
The webpage is https://stocksfarm.net/shop/hop-varieties/phoenix-2018/.
The webpage says, “It is a little known hop as all was originally grown and sold to just one brewer.” Any idea who the one brewer is?
Other than that I haven’t seen any reference to its ever having been exclusive. Phoenix was selected as a seedling of Yeoman, bred at Wye College at the same time as Admiral, as a replacement for Challenger, and was released to the public for general cultivation in 1996.
