bacon cupcakes

I made these this morning for the kiddos before school.  Thought I would share the goodness.

fry up some bacon until mostly done

put the bacon in a ring in the cupcake pan

add an egg

cheese, broken up tater tots, some salsa

in the over for 15 minutes at 400

Dang’it!  Now I’m hungry again.  :slight_smile:

And I thought this was going to be a cupcake with little bacon bits on top.  I’m going to have to try this, but instead of salsa, I’ll try some green chili sauce.  Thanks for the idea!

There is a cupcake shop in my town that does this. chocolate cupcakes with bacon in them and on top. people like them apparently. As a lifelong vegetarian I can say that the only reason I have ever wanted to try bacon was because everyone else seems so into it. Personally (sorry weaze, remember the brotherhood of the kilt) don’t care for the smell. and what little bits I have tasted (accidentally) were not to my liking either. This is kind of strange as the nasty frozen fake soy bacon I actually like. go figure, I guess I just don’t like pork.

How about bacon maple bars?

Wyeast flew many boxes of them into SD last summer for NHC and was giving them out in the hospitality suite.

That’s just wrong.  I like bacon, but it’s not THAT freakin’ good…

I would so eat a bacon maple bar.  I might feel disgusted with myself afterwards but I bet I would enjoy every damning bite of the experience.

That was exactly my reaction when I ate one.  Well, that and “don’t tell my cardiologist!”.

I beg to differ, they are indeed THAT freakin’ good.

Are the eggs cooked through or are the yolks still runny?

I’m going to try to do them with a runny yolk. Hard to beat cleaning up your yolky plate with a piece of buttery toast. Damn that’s gonna be good.
