Bread into beer

This Pittsburgh Food Rescue Is Turning Food Waste Into Craft Beer - Saveur

You can tell the author is not knowledgeable about beer. If they were they would of asked how much of the fermentables were bread, what other ingredients were used, what style of beer etc.

This reminds me - now that I’ve started making my own bread I should start saving my stale scraps to brew some kvass.

My wife has some kvass going right now but she just used a culture she had around, no bread. It seems there are many ways to make kvass.

Hmmm, I guess I really am backwards, I made bread yesterday out of beer. Volcano Porter [ invasive wild yeast had it’s way with what was a great beer a couple months after bottling] for the liquid, spent grain and ground crystal malt for about 1/3 of the “flour”. Kinda heavy as you’d expect, but damn tasty.
Cryin’ shame that batch of porter went south though, I’d much rather take my nourishment in liquid form.
