Made a Brett starter from a White Labs vial a couple months past it’s prime. Heard Brett starters don’t have a lot of activity. Turned the stir plate off last night, and turned it back on this morning to see it looking like a seltzer. Hadn’t noticed carbonation in the week it’s been on. Infected, or is this normal?

I have problems with it from time to time as well. I have to try three or four times sometimes[emoji2369]
It doesn’t look infected to me. I can’t say that I’ve made a starter from a pure Brett culture, but my mixed culture starters from bottle dregs are fairly active when I step them up, although I don’t get a typical krausen. That is probably just the carbonation that built up while the stirplate was off coming out of solution.
I’m not a stirplate user but it looks like a normal starter with a lot of activity.
Brett fermentations will look a lot like saccharomyces fermentations when it has a large number of cells. It can take a little while for the cells to get that level of activity but it looks like you have a healthy starter.
