Thanks for posting the link.  I was listening to the episode and trying to remember how your beer came out, thinking “Jim did this.”
I’ll have to re-read the thread to see how you tackled pH.  I’d like a ridiculously strong RIS on tap this winter.  Or bottled for future winters…
