I stumbled across this site today, some interesting bulk sugars at extremely reasonable prices. Powdered molasses looks interesting. Maple sugar. Ridiculously low price on Lactose. Sucanat? Dried Honey Powder?. Anyone ever heard on “Monk Fruit Powder”?
Monk fruit is the latest natural low-calorie sweetener in the health aisle. Like a new version of Stevia. It’s popularity is probably fading as we speak.
Yes. I went through a period of using different sugars on the same tripel recipe. Most were almost indistinguishable but the sucanat definitely had some flavor. I liked it.
What do you like about it? What kind of character does it lend. I bought done coconut sugar and coconut syrup to play around with awhile back but never got around to brewing with them yet.
you have to use a fair amount but they give a very subtle but definite coconut note both in flavor and aroma. They dry out as well as any other sugar but leave a flavor that is distinct from the varying levels of ‘molasses-i-ness’ that other dark sugars leave.
I use it in a Belgian Dark Strong at about 20% of the fermentables and it is evident. I’ve been meaning to try it in a lower gravity ale to see what I get.
