Carbonating PSI - Temperature of Serving or Carbing?

When carbonating in a keg and using a chart like this (http://www.homebrew.com/pdfs/CO2chart.pdf) do you set the regulator to the desired pressure for serving or the temperature when carbonating?

In my case I’m lagering at 30f but plan on serving at 46f - wasn’t sure if I should have it pumping at 15psi to hit 2.5 volume when serving or at 7psi.

You want to set the pressure for the desired volume of co2 at the temp the beer is currently sitting at. When serving, you will adjust due to the higher serving temp.

I’ve always wondered about these charts though. How long should my beer sit at 38ºF with the pressure at 8psi in order to reach a co2 volume of 2.2?

Yes.  It can be hard to wait that long sometimes.

You can also hook it up at serving pressure, shake the bejeezus out of it, and tap it the next day.
