Hard to beat ! Good weekend for it.

Nice. I just made something chili-like… smoked brisket and pork belly pressure cooked to soft, with some rice and chili adobo. Thinking the leftover makes a nice shepherd-like pie later this week, or just a simple pot pie.

It is. I have a photo with Bear Bryant dating to 1983-ish. Such a wonderful man. Lots of same values with my alma-mater at Kansas State and Coach Snyder! Roll Tide!

I love making chili…granted it starts with Brooks but ends up mighty tasty with venison, onion, garlic, chili powder, cayenne peppers, yellow/orange bell peppers, basil, worchester sauce and whole bunch of hot sauce. I’m probably missing something.

Can’t beat cornbread with it.

I make a huge pot and freeze it in small Tupperware containers for lunch.

My secret ingredient in chili is the meat marinade. I typically use thin sliced stir-fry sized steak. It gets an overnight soak in the juice from a jar or two of pepperoncini peppers (the peppers themselves go with some buffalo wings), along with a decent handful of cracked black peppercorns. Between the acidic marinade and the long stewing, the meat falls apart to shreds. I like that texture a lot better than ground beef for my chili.

The actual recipe changes each time, but chili powder and Serranos are always key players. Need to whip up a batch soon, myself.

Even an elitist snob from New England like me doubts that 'Bama has low academic standards. Seems like a low blow to me.
EDIT: and oh yea, I like to use a lot of smoked paprika in chili.

No worries, mate. It’s probably for the best that the rest of the world continue its stereotypes of the South lest we suffer more Atlanta’s or Miami’s, both of which are past the point of no return :wink:
