I brewed a one gallon test batch of this and it turned out pretty well so far (a week old).
2 lbs Briess vienna
1/2 lb crystal 10
1 1/2 lb corn sugar (added at the end of the boil)
1/4 lb wildflower honey (added just after the boil was done)
Mashed for 60 min at 146 F.
1/4 oz Summit for 30 minutes of boil
Yeast: WLP575 - Belgian style ale blend (made a 1/3 gallon starter)
Fermentation temp was in the neighborhood of 80 degrees F.
OG: 1.143*
FG: 1.020*
- adjusted to 60 degrees F
Attenuation: 83%
ABV: approx 17% (hence the name of this beer)
Tasting notes: The first thing that jumps out is the alcohol - a bit too quickly for me. Other than that the flavor is very mellow and mild with just a tiny hint of honey in the background. Since it is so strong, i think i will add 1/4 cup wildflower honey to the gallon to sweeten it up and balance the ABV a bit (i think the fermentation is done. If i were yeast, a 34 proof beer would kill me too). This would be best filtered, so it is a nice clear golden color, and not carbonated. With the color and sweetness i think it would be best to serve it like a wine (flat and cold).
