Has anyone use dates in their beer if so when did you add them
I used them in a Dark Sour. I pitted them and added them in the secondary. It added a nice,rich, fruity sweetness to this beer. So, I would add them after primary fermentation is complete. They will kick fermentation up again, but I think this way will retain the most flavor from the dates.
I’d do the same thing I do for figs…when primary is done, get out your wok and superheat it. I use my brewing burner. Toss the dates in a caramelize them. Deglaze with some of the beer from primary and add the whole thing to a secondary.
