I have a lot of persimmon that is ripening and I am hoping someone might have a recipe. I could figure one out myself but that is risky-- and I am not sure what might enhance the taste–like cinnamon or an additional fruit?
I was going to make a persimmon mead last year but then my wife had a baby and I never got around to it. Those simmons are still sitting in my freezer. oh well
I would just go with 1-3 lbs of honey per gallon and 1-5 pounds of fruit per gallon.
