Easy Yeast Bank

When I build a starter I always save a bit of the starter in a 4 oz jar. So far I’ve had excellent results. I just pitched a 3 year old sample of Omega British VIII into a 500 ml 1.020 wort and it took off in no time to the point that at 10 hours I’m preparing another liter of 1.040 wort to add in. Haven’t had a failure yet. Sure it’ll happen eventually but for a homebrewer it’s worth trying!

My process is worth noting. I boil the 4 oz jar and lid then spray with star san prior to use. I swirl up the starter so yeast is fully suspended, fill up the jar to within an 1/8” of the top, secure the lid. I label and place in the fridge.
