Fermentation temp. question

Just pitched a couple of hours ago (APA, S-05 yeast 5 gallons) and the ambient temp in my swamp cooler is around 52. I’m guessing it will warm up a bit, potentially up to 60 or so. How cool is too cool to that it will prevent fermentation from starting up? I typically keep the cooler around 65 once things get moving.

IMHO-52F is too cool, 60F is pretty cool and 65F is money.

I thought I’ve read that some folks ramp up to temo

I don’t know how much ambient temp ,matters to the yeast…it’s the beer temp that counts.  And 05 will work at 52, although slowly.

Well,  ambient is what us folks have to go on!

You could try putting a sanitized thermometer in the fermenter or getting one of those Fermometer strips to go on your fermenter.

Yep, real slow. +1 to a bucket thermometer.
