I hope its not belle saison in a different package. Not talking down on that yeast, but It’d be great if it was a different yeast for varieties sake. The specs seem different.
we seem to be entering a golden age of saison yeast. Every few weeks another comes out.
If I had to guess, I’d bet on Dupont. But at the very least it should be different than Belle Saison, since the description does say that it’s a Belgian yeast. Belle=French=3711, in my opinion.
If it really is Dupont, I’d be curious to see how it ferments compared to 3724, which we know is great and finicky. A less stall prone version would interest me if the flavor profile were comparable.
Oh yeah, I pitch both normally when I want some Dupont character. It’d just be cool to have a version that was easier to use on its own. 565 is a little better in that regard IMO. I didn’t have the luck Drew does open fermenting it - still stalled on me. Regardless, I’m really happy with Imperial Rustic (aka 3726) right now - has more character than 3711 IMO but easy to use.
I have a sample from HomebrewCon. Brewing a saison with it tomorrow. FWIW, I get pretty good results from Belle Saison, too. I am brewing it side-by-side with this yeast for this batch, 10 gallons split into 2 fermenters. I will respond to this thread with info about how the 2 yeasts performed.
It was rolled out at NHC a couple of weeks ago. The BSG people had a Saison on tap at their hospitality booth made with that yeast and it was very nice. I noted that the pepper phenolics were pronounced. I think it should be a good choice for Saisons.
