Loved the article.
I had one question about the sour starter. Would it be of benefit to acidify the starter to pH <4.3 to start off?
TIA, Tom

I might comment once it arrives in the mail. It comes here after many get theirs, but there are later recipients.
Well, I guess it worked. The Rockyard brewpub in Caslte Rock challenged our club to all brew Berliner Weisse’s and they would pick their favorite for their Summer seasonal and I won. Just my luck, my first professionally-brewed recipe and it’s a low gravity, sour wheat beer. Yech! I made them a 5 gallon sour “starter”.
Congrats, Tom!
That would be mu luck as well. Kewl thing however.
Zymurgy mails from the printer in Michigan. They probably just walk yours over. They send mine via canoe (I’m still waitng too).
