I am migrating from an older glycol jacketed fermenter to a newer one. This process has me rethinking my setup. The overall setup will remain basically the same. My chiller has a temperature set point to control the bath. In the bath is a pump that is hooked to a temperature controller with a sensor in the fermenter. The controller turns the pump on when cooling is demanded, and turns it off once satisfied. Previously I would set glyco chiller at 34° and the fermenter temperature controller as needed, typically around 68° for ales. On a particular batch of a lager I dropped the temperature of the controller down for the lager yeast. I left this going while on a short vacation. Big mistake! My daughter came over to water some plants for me while I was gone and found my brewery floor flooded with condensation. This got me thinking. Why have the chiller set at 34° when I’m only cooling to the mid 50s or '60s depending on the brew. My thoughts on this are that this only creates excess conversation, yields overshooting due to the cold glycolin the jacket when the pump shuts off, and waste electricity. I’m thinking I will try setting the glycol chiller at 10 or 15° below my desired fermentation temperature. If anyone has any hands-on practical experiences, I would love to hear about it. I expect that the pump will run more if the coolant is less cool, but otherwise it should get the job done. And it might result in smaller temperature swings, which could be a good thing.
Where is the condensation coming from? The chiller? The fermenter?
I’m thinking that if you’re interested in being efficient with the electricity, an insulating jacket on the fermenter might be a good option (if you don’t already have one). A friend of mine simply bought a couple kids winter jackets that were on clearance. His fermenters are adorable when they’re all dressed up. ![]()

Kidding aside, I did buy it’s waiting jacket for my new fermenter. Haven’t tried it yet but it should help.
I have found that my glycol setup works best if I set the glycol chiller to 5 degrees F cooler than my target temp. I see less temperature swings when I do this. It just takes a little longer to cool to my target fermentation temp.

Ken D, I have Blichmann glycol chiller controlled by an Inkbird temp controller and I am doing the same as you,set the bath to 34F while fermenting most beers in the 64-68 F range. Honestly I got lazy and just lelt it at 34F after the last cold crash, previously turning down only prior to starting a cold crash. You post prompted me to look at the Inkbird temp history and I am seeing 2-3 degrees F temp swings. You now have me thinking…it will be interesting to see if anyone else has thoughts
That condensation is probably forming right on the chiller coils themselves with that big temp swing. 34F to 68F is a lot of differential, so youre essentially running a dehumidifier for your whole space. Dropping the chiller down closer to your target temp should eliminate most of that since theres less cold surface for moisture to condense on. Plus yeah, the pump cycling more feels annoying but its probably actually smoother than the current setup where you get that dump of super cold glycol that overshoots everything.
Thank you everyone for the response. I agree that the majority of the conversation is probably coming right from the coils. But I failed to mention in my original post is that I also have a coil sits in the glycol along with the pump. I run cold tap water through this coil then through my counter floor chiller to cool wall the wort after boil, before fermentation. Based on suggestions I think I will give the following a try: but not a used turn the chiller off,. Night before Brew Day set the chiller to 34°. Through the beer and run the warrant through my counter flow. Once fermenter is full call crashes needed. Once called crashes completely done reset chiller to 5 to 15° below fermentation temperature. As mentioned this who will still allow condensation and the coils. To deal with this I will purchase an air conditioning condensation pump and place it directly under the drain spout on the chiller. This will collect the condensation and pump it to a drain. I will repost back here the results. Thank you everyone.
