High Gravity Fermentation Question

I have a beer with a starting gravity of 1.094. Used two viles of WLP001 in a 1800ml starter. Fermentation took right off, slowed after about 6 days, but then seemed to pick back up a little bit.

My question is, what would cause it to slow and then pick back up? Temperature remained the same throughout the fermentation. I’ve only ever seen the activity go in one direction, from fast to slow. Not Fast to slow back to Medium Fast :slight_smile:

How do you know fermentation slowed? Have you been taking frequent gravity readings?

I’m referring to the blow off tube bubbling more so than from a gravity perspective. I’m not sure this is even a good guage of activity, I usually don’t take the gravity until it’s around 12 days in the fermenter.

That’s what I was getting at. Your beer’s fermenting, so keep the temps stable and call it all good.
