Hit FG but still lots of activity.

I have a red pitched with US-05 that has been fermenting for nearly a month.  OG was 1.053 and I have had 3 readings in the last 10 days at 1.005.  I kicked up the heat in the room a couple days ago and it started bubbling like mad.  It has had yeast and bubbles on top all along but the gravity is not changing.  Can I bottle?  The beer tastes great btw.

The activity after raising the temperature is likely co2 coming out of solution.  Since you did multiple readings with no change you are done and ready to bottle.

The activity is probably just CO2 coming out of solution now that you’ve bumped up the temp. If your FG reading is stable, go ahead and bottle.

Thanks guys, will do.  Is 1.005 really low, or is that normal for 05?  This is my first time using it.

Kind of depends on the recipe. pretty low but if it’s all grain mashed low with a low OG it’s not that low. s-05 is a workhorse for sure not like a belgian saison yeast but still a pretty good chugger.

So here is the recipe (don’t laugh, I am a noob and made it up) :smiley:

6 lbs  Amber LME
.75 lbs Wheat berries
1 lbs 2 row
.25 lbs Rolled oats
.5 lbs Wild rice
1.5 lbs Honey

2 oz Hallertau pellet hops

1st cereal mashed the wild rice and wheat berries, then mashed all the grains at 155 for 70 minutes.

Yup, that honey is going to dry the beer right out. actually looks like a nice american farmhouse/saison recipe. I would be interested to hear what happens with a different yeast with that bill.
