Looking to brew a Sahti during Big Brew, in exactly 2 months. I’ll be out in Utah in 1 week and plan on foraging some juniper branches then. So I’ll need to store them for about 7 weeks. What’s the best way to store them so I still get the most out of the them during brew day? Still in my infancy of sahti recipe research, but I’m assuming I’ll do a no boil recipe.

You could freeze them or just let them dry. I don’t see why they wouldn’t work if they dried out a bit just like dried herbs vs fresh. The only bad thing I think you could do is store them in moist condition as getting moldy strikes me as the only bad thing to happen.
Alternatively you could see if you can find them closer to home, they grow all over the U.S. although they are probably more prevalent in northern states.
I would dry them by hanging them somewhere dry and cool.
Be aware that some varieties of juniper are toxic.
My only experience is with Spruce Tips harvested when they were just popping out (1 inch max) - I vacuum sealed them and froze them. They were fine when used a couple months later, but I wasn’t using that much of them (couple ounces in the post boil)…
