I hope I didn't mess this up.

I meant for my first hop addition to be at 15 minutes. I hope I didn’t give this Saison a bitter bite. I went by the timer on beersmith so this was the schedule. I wonder if it would help to add a pound of corn sugar after primary fermentation is over.

I don’t think adding more sugar is going to accomplish anything except more alcohol. I don’t think it’s going to be way way more bitter than you intended if you only added your hops 5 minutes earlier than you meant to. It’s going to be very very bitter it looks like though.

Yep.  Not only do you not get a lot of isomerization at 20 min., the difference between 15 and 20 min, will be virtually undetectable.

Are there more hops than what you posted? It looks like these are additions 4-6 but where is 1-3? When I plug the above recipe into beersmith I get 54 IBU not 104.

I find late additions of these hops that my phone won’t let me spell tend to add way more flavor than bitterness. I did an IPA with 1/2 pound of them that finished extremely smooth. I started my additions at 15 minutes on that beer.

the 4, 5, and 6 are the sequence of itemsin the recipe, you will see 1, 2, and 3 is the grain bill and 7 is the yeast

I does seem like most of the NZ hops are less bitter than the calculated ibu and late additions seem less bitter than the same ibu from early additions.

One thing that could make this beer seem more bitter than your IPA with the same hops is the lower finishing gravity.  This beer will be around 1.004.  Your IPA was probably closer to 1.012.  The saison will have less malty sweetness to balance the bitterness.

But no, there isn’t going to be a big difference because you added hops at 20 rather than 15.

I just sampled this from my conical. It is very smooth. The Nelson Suavin “grape” flavor is still not very prominent. But it is a very crisp, smooth, and refreshing beer.

Can’t resist commenting.  Of course this Nelson Suavin saison is gonna be smooth.
