Ruhlman writes a lot about Polcyn in “The Soul of a Chef” which, along with the other two books in the series, is a fantastic read. I read “The Making of a Chef” on a flight to a vacation and once I finished bought the other two and read them by the time I got back.
From what I gather, they have remained friends since the “Soul of a Chef”. Ruhlman was the co-author of “Charcuterie”, and I expect he is doing “Salumi” with Polcyn.
Ruhlman was at the local place signing “Charcuterie” alongside Polcyn when it came out. Maybe I will get there for that event this time. Big doings in our little village.
