NHC 2013...What seminars are you attending?

So, the NHC is almost upon us.  I know, I know…I’m just as excited as you are.  It’s my first NHC and I’m almost to the point where I’m counting the hours.  My question is simple:  Which seminars are you attending?  You can only make it to 12…which one’s are the most important to you?  Here are mine:

Thursday:
2:00-3:00 Process Improvement and Beer Enhancement: The Nano Experience
3:15-4:15 Beer Recipe Design
4:30-5:30 Stepping Up Your Sensory Game: How to Be a Better Taster

Friday
9:00-10:00   Yeast Culturing 101
10:15-11:15  Biochemistry and the Mash
11:30-12:30  Hop Growing 101: An Introduction for Everyone
2:00-3:00   Brewing Better Beer: Practical Applications

Saturday
9:00-10:00   A Simple Fermentation Monitoring and Control System
10:15-11:15  Step Up Your Starters:  Instight Into Yeast Propagation for Homebrewers
11:30-12:30  Current Techniques and Recent Developments Used for Brewing Great IPAs
2:00-3:00   Methods of Creating and Maintaining a Wild House Culture
3:15-4:15   Fermenting on the Flip Side: Alternative Fermentations & Practices

I still haven’t finalized my seminar intentions. Kind of going to wing it based on how I feel that day. I have the “Almost” tickets, so I only have Friday and Saturday to attend seminars, but so many of them look appealing it’ll be (possibly literally) a coin flip as to which I attend. If there are two “can’t miss” seminars in one block, my wife and I will divide our powers between them and share notes after.
