I have a batch of American Amber in the fermenter. I was concerned my OG was too low and added some DME with 10 minutes left in the boil. I added too much and now have OG 8 points higher than targeted. I am concerned about the beer being in balance and not to sweet, so I am considering dry hopping. This is a 3 gal. all grain (except for the dme at the end). Target OG was 1.062, actual is 1.070. Using Tettnager and Cascade hops. Any suggestions?
Not much a difference really. If you wanted to stress about it you could add about 10% sterile (boiled or bottled) water to dilute it back down.
You could sure sample it post-fermentation and make the call at that point. I would probably just go with it - your yeast should still be able to attenuate that.
