Enjoyed a Souther Tier Pumpking yesterday and noted that the aroma is just like pumpkin pie crust. I’ve noted a similar aroma in an apple pie cider before. What ingredient lends to this aroma?
Some vanilla extract combined with pumpkin pie spice liquid extract (google search Olive Nation).

when I think pie crust I think biscuit and butter. you can get some biscuity character from Marris Otter, some from victory (so I’ve heard, never used it), Munich is more of a bready toasty thing but maybe with just a touch.
I wouldn’t try for a buttery aroma,flavor. To me that just tastes like diacetyl.
+1 to MO, Victory, or Biscuit for a toasty, biscuity character.
