I currently utilize a 6 stage RO/DI system to “clean” my water before mixing my salt for a fish tank system in my home My question is, would I be able to also use this same 6 stage system to prepare water before brewing?
I have a RO DI system. My RO is 10 ppm or less, which is low enough that I don’t use the DI stage.

My RO is low teens TDS and I build from there. I sent it to Ward Labs to confirm specifics and use those for specific additions to be determined from the base water.
Some are blessed with great water. Some aren’t.
IMO, if you aren’t, using RO/DI or even distilled water is the way to go. It gives you a consistent blank slate (or very near blank slate) to build from instead of trying to manipulate municipal water that could be constantly changing.
Yes
You can certainly use that system for brewing water use. But you don’t really need to include the DI component since you do want some ionic content in your brewing water. There’s no need to take it all out with an expensive extra step.
