I was reading the Samichlaus Falconclaws article in the recent AHA email newsletter. I need some clarification.
The article before the recipe states “at 1.140 specific gravity that undergoes nearly a year of lagering before being bottled and enjoyed in the following year’s holiday season.”
Does this mean it is a total of two years before enjoying? One year lagering followed by bottling and conditioned for another year (since it states “enjoyed in the following holiday season”)?
It is meant for 1 year total of aging. It should be brewed on December 6, 2013, allowed to lager for 10 months, and then bottled to be enjoyed in December 2014.
Let us know how it goes if you decide to brew a batch. That’s a lot of grain to wrangle!
