Yes. Cold smoking is where it’s at. Three sacks of malt over alder chips for the 15 bbl. batch.

Well done! How long did you smoke the malt? I have been tempted to try it in my smoker, but I would have to borrow my buddies cold smoke attachment. I was thinking of trying pecan chips. And you did 3 sacks - not all at once, or was it?
They did a double batch, so it was actually 6 sacks. My box holds one sack on eight shelves and a pound of chips burns for about 90 minutes.
They like to use alder wood chips, but I keep telling them to source the local stuff since their motto is “inherently Floridian.” Citrus wood makes a smoke very similar to Beech in my opinion.
