Watching a video from NB that states to just wait until the side if my brew pot is warm to touch. Shouldn’t I be checking the temp to know exactly when to rack and pitch yeast?
Side question, is Starsan ok to spray on my Thermapen?

Ignore that advice and take a temperature reading. I like to pitch at the temperature I’m fermenting at.
