Anyone have any experience or have used star fruit in some sort
Of fermentation project. I have a tree that produces non-stop and was wondering if there is a useful fermentation option.
We get star fruit fairly frequently from local growers (via our farmers market), but I’ve never brewed with it…just off the top of my head, I think it would do best if you rack the beer onto the chopped starfruit, during/after fermentation. Starfruit is fairly tart and can be a bit astringent in some cases, so you’d probably want to calibrate ripeness as best you can. I can imagine it working well in a blonde ale, or maybe a kettle sour. Something relatively light bodied and light color / flavor would work best, I think.
