Wake up or pitch..

…made two step starter for lager two weeks ago. Brew day didnt happen when i planned but now im ready…so do you think i could just decant and pitch, or make some wort and wake it up…?

I agree and would do a shaken not stirred approach with the yeast and pitch it at high krausen.  Not just awake, but ready to roll!

After less than two weeks of cold storage the yeast should be in great shape and I’d just pitch it.

^^^^THIS.  (After a couple of months, maybe rouse it, maybe not.  Depends on strain and conditions.  Pitch rate might need adjustment.)

I’ll volunteer one of six and say that I would still favor a vitality starter after 2 weeks - I just prefer an active pitch, so much so, that I rarely pitch reharvested yeast that is on hand after 2-3 weeks; making a quick starter is just too easy.  I brew mostly lagers, so a quick start to fermentation is critical IMHO.  YMMV, of course and I am just one of six!
