What do I do with this cherry extract?

So some of the booty I got for prizes in a homebrew competition included 2 bottle of cherry extract (one for each beer that won).  I am not really a fan of fruity beers and I imagine if I were to brew one I would use real fruit.

Any ideas?  I guess I could just pass it on but perhaps there is some really cool idea out there of a use…

I just ordered some from NB.  I was planning on making soda pop with it.
A little corn sugar, citric acid, water and CO2…allow time for carbonation…nice over ice this summer.
I also ordered my other favorite extracts, peach, apricot, blueberry…WAY different from pepsi. ;D

Also methinks a cherry stout is prolly a good thing.

You can always use it in cooking…doesn’t necessarily have to go into brew…

We used a bottle of raspberry extract whenever we wanted some in the beer. That way we could have straight RIS, or raspberry RIS.

You could try a drop or two in a beer that you might consider making a whole cherry batch of.

Anyone know how long the Oregon fruit purees last?
