Following my trip to the brew store I am unable to brew the beer I had intended to brew in the upcoming weeks. He was out of basically any specific ingredients I was looking for but I figured I couldn’t leave empty handed. So I just grabbed a bunch of hops/malts and yeast that I thought I could use. So now that I have the supplies I need a good recipe to try. Let me know what you guys think I should make.
Malts:
*Irish Ale malt(only base malt on hand but I personally would use in any recipe)
*Briess Crystal 40
*Honey malt
*Weyermann Cara Amber
Dark Crystal Malt 150L
Briess Crystal 10
Hops: (2oz of each)
*Mosaic
*Simcoe
*Brewer’s Gold
Yeast:
-WLP029 Kolsch Yeast
-US-05
-WLP001 California Ale Yeast
Not a huge fan of IPA’s but I am willing to try anything. I was thinking a Pale Ale style or Amber Ale.
A simple hoppy pale ale, 90-95% base and 5-10% crystal, a balanced charge of hops at 60 and then flavor/ aroma at 10,5 ,0 and dry hop with a couple oz, should be tasty
I think it would be a shame to use mosaic and not have some at 1 min, 0 or dry. Also, that’s a bit light on the late additions. Mosaic is born from simcoe, so they go together like pb&j.
Oops! I forgot to add in that, I planned on dry hopping with mosaic also. I have never dry hopped before so any advice? The reason for only using mosaic is so I can really see what they impart on this beer seems how I have never used them.
What is your goal? Depending on how much you use for dry hop, this may end up tasting more like an amber ale. I think with your current hop amounts, you won’t get that much hop character. Even if you don’t want something too hoppy, I would probably decrease your bittering amount and up your late amounts to make up the IBUs.
I do think it will be tasty regardless it just depends on how much of the mosaic you want to come through…
I would bitter with something other than the Mosaic, but that’s because I have a keen favor toward Mosaic in the flavor and late hopping stage - a really flavorful hop. I used it once for bittering and frankly, regretted it - a waste of a flavorful edition.
