What would you brew?

Yeast US-05, nottingham, 060, 1450.
Grains
#8 brewer’s malt
#3 dark wheat
#3.8 flaked corn
#2.6 flaked oats
#1.3 pils
#.75 10L crystal
#.5 aromatic
3oz black malt
Hops
3oz Idaho7
2oz citra
1oz Perle
1oz willamette
1oz kazbek

My only thought was APA with citra and idaho.  And I should say I am not against a trip to the LHBS, I just need to get rid of most of this stuff.

I only have 8 gallon and 6.5 gallon fermenters available

So, I could go 10 gallon and split, but I was thinking 7 or less

At 10 gal., you’re making a very hoppy APA (the dark wheat isn’t as dark as I was thinking).

At 7 gallons, you’re making an American IPA.

I would take the brewers malt, pils, and corn (maybe a touch of C10) and the Perle hops and make a cream ale.  Put in the Kazbek at the end (or maybe split the perle and kazbek for both early and late additions).

That was my thought, too. 75% 2Row, 20% flaked maize, 5% 10L.  18-20 IBU Perle/60 mins, a little Kazbek @ flameout. Mash 150F/90 mins. 1056 @ 60F.

Sorry, I forgot to say either the US-05 or the 060 for the yeast.  I don’t know anything about 060, but I’m sure either american ale type yeast would be fine.  1450 would probably work OK as well.

True enough. A good ole APA with Idaho and Citra would always be tasty.

What’s the lovibond of the dark wheat?

You might be able to make a Franken-Porter (I’m thinking something that lands between an English Brown and a Brown Porter) with the Dark wheat and the black patent, with some medium crystal, some of the oats, and the Willamette, bittered with the Perle, and using the Nottingham.
