End of Days Doppelbock on 12/21/12
After everything so dark, sweet, high AVC from the hoildays, I am going to brew Jamil’s Ordinary bitter.
gotta get my starter for Next weekends brew day stepped up! already three days late. and one more step to go.
I suppose I could brew an 8 day bitter this weekend instead. But what would a bitter with kolsche yeast be like? nah. might brew a bitter anyway just for the heck of it and because I will be on vacation!
Going to try my hand at making my own invert sugar and put it in a Cream Ale.

Am brewing a ton this weekend - 12gal of IPA on 12/21/12 (might incorporate Calypso and/or Mosaic on this one).
then, assuming the world is still intact…
12gal more IPA on Saturday (pitching 007 instead of 001 here)
and finally a batch of Orange Blossom Mead on Sunday.
Brewing 10G of Smithwicks clone for Holiday “Man-Day”. Got a group of 10 guys coming over at 1:00PM with whiskey and cigars to watch a brew kettle and talk smack. No wives or kids allowed! 8)
Until 6:00PM as that is when the wives are coming over for the full-on holiday party…

11 gallons of dopplebock on Saturday. The plan is to eis half of it at some point in the future.
I may brew a Belgian Blonde on 12/22. Hitting the road to mom’s on 12/23, so no brewing until after the holidays if it doesn’t get done this weekend.
I have to bottle my BVIP tomorrow before vacation. If the planet’s align, I might do a late night brew session and make a farewell to 2012- Amarillo IPA.

For the first time in a long time, I don’t have my next brew planned yet. Probably nothing doing till the new year, although if I find some time I have 3 quarts of maple syrup that need to be introduced to some yeasties.
Currently heating strike water for a brew day with my BIL. Split batch of BPA and APA.

working on a high gravity brew i call emancipation. was supposed to brew in september but this weekend or next. thing of it as a CAP with double the OG and hops. (target og is 1.100 and ibu of about 60)
a Mayan Imperial Stout (with dark chocolate, chili peppers, cinnamon, etc). Not sure of the name, maybe Out of Time or Post-Apocolyptic Imperial Stout (PAIS - inspired by the last name of David Pais, a good friend).

I brewed a beer like that earlier this year and named it Apocalypse Cacao.
Why not call it Hunahpu’s or some other unpronounceable name?
I’ll be brewing a Belgian Tripel IPA on 12/21/12!
Got some fresh Columbus and Mt. Hood from Fresh Hops, so I am going to finally brew Denny’s Rye IPA. I will hopefully brew a Baltic Porter as well, but that may be put on hold for a week or two. Looking to bottle my Mosiac Pale Ale, and keg the latest landlord clone.
