What's your first brew for 2011?

What does everyone out there have planned for their first brew of 2011?  I’m planning to kick off 2011 with a big Tripel and hoping to use the yeast cake from that to brew a quad

Happy New Year!

Stout

dopplebock.  needs to be ready for easter.

Chamomile Pale Ale.  I am also making an IPA, Old Ale, and Ordinary Bitter this weekend!  ;D

American Brown Ale.

That Chamomile Pale Ale sounds pretty interesting.  Have you made it before?  What kinda hops?

This is the first time making it.  I had some extract and some homegrown hops that I wanted to use.  I am using homegrown Fuggles and Hallertau.  I steeped 10 chamomile tea bags in 1.5L of hot water for 5 minutes then added it to the wort after I removed it from the heat.  If you would like the recipe let me know and I will post it.

Foreign extra stout

I have two beers that I’m going to brew this weekend.  Today will be the Innkeeper, and a THA clone for tomorrow or Monday.

Not so much a recipe as some tasting notes.  Let us know how it turns out.  I’ve had some meads that used chamomile tea, but never a pale ale.

Just a Dubbel here

I can definitely do that.  It will be interesting to find out what type of flavor the chamomile adds to the beer.

My second go at a Classic American Pilsner.  Almost 10 gallons split into two for some yeast trials.

I’ll be brewing another batch of my strong Belgian ale with cherries tonight. I’ll also be racking my IPA and bottling another batch of tonights brew.

Schwarzbier.  This will be my first.  Once you go black… ;D

edit: Actually, I may be brewing my Winter Warmer again.  I took a chance on a yeast I hadn’t used before when I originally brewed it last month.  It didn’t turn out so well. >:(

A N. German Pilsner.  Maybe on Monday.  The 6L starter for 10.5 gallons is on the stir plate(s).

I already have the Dubbel in the fermenter.  Want to give it some friends  ::slight_smile:

I brewed the Wild Flower Wheat in Extreme Brewing which uses a bunch of whole chamomile flowers. I’ve brewed this one twice and it turned out great both times. Definitely adds an interesting flavor. I liked it and will brew it again.

As for the first beer for 2011…it will be a Celebration Ale clone to Celebrate the new Decade!!!

What are the differences between a Northern and Southern German pils?  I’m curious because I’d really like to brew more German pils this year and am trying to learn more about the subtleties.

Would not a “Bitburger” be the Northern German Pils and Helles the southern pils?
Just a speculation on my part.
