When to pitch yeast in cider

Greetings,

I brew one cider a year and the instructions I have is to wait two days to pitch after adding juice and campden tablets.  I’m curious if this is standard and if so why.

Campden takes a couple of days to fully serve its function and wear off.  If you add Campden and yeast at the same time, the yeast won’t necessarily die from it, but they really don’t like it and will generate a lot of sulfur.  Does it really matter?  My guess is not.  But this is pretty standard advice.

Or you can skip the Camden and pitch immediately, which is what I do.

I might try that next time.

I don’t use Campden in Cider.

Neither do I actually.  But thousands of cidermakers do.
