I am brewing a 10 gallon batch of kolsch next weekend and will have a big cake of wlp 029 available a few weeks after that. I could brew a porter to use that cake but I also have a 100% wheat brew planned. and I thought that it might work well there as well. Gonna be 100% wheat malt bittered with heather tips.
Single Wheat and Single Heather makes is a SWaSH so it’s called SWaSH Buckler
Haha that’s a great name and a very interesting brew as well. I recently bought a book called sacred and herbal healing beers and it has some great information and history on heather and it’s use in brewing. Just thought I’d share that with you
cool, that’s what I was looking for. I guess Errol (A swash buckler) will have to use a different yeast. maybe a weizen yeast. guess I best plan a porter.
Not sure about the WLP029, but I prefer my heather beers bursted or late hopped so to speak. I generally do 4oz at 10 minutes and 0. Usually a low neutral bittering hop at the beginning. And a little heather honey for some complexity!
I almost didn’t want to tell you that because there seems to have been so little experimentation with this strain at higher gravities. But it did not make a beer I enjoyed the two times I tries it, and basically it was all pilsner malt with a portion of sucrose, basically a tripel grain bill and a kolsch yeast (wlp029). Tried two iterations and ended up dumping them both.
I have that book. It’s a good read and has lots of great idea for ‘non-traditional’ fermentations, Might well have been where I got the idea for heather beer in the first place.
