I am not so sure about lager yeast vs ale yeast argument.
I am more in opinion that the same yeast under different temperature create different flavors.
I can make quite nice “ale” with “lager” yeast at 70F.
Agreed. And what I’m saying is that I don’t see the point for using a lager yeast (unless like you it’s all you’ve got) when you can get lagerlike qualities from an ale yeast.
My usual lager fermentation time is 10 days.
I made Alt with my yeast and fermented at 60F in 6 days.
If I ferment at ale temp I will be done in 4 days.
When we talk about taste.
Warmer you ferment more fruity esters it gets.
Still pretty clean thou.
