2025 Brew Year’s Resolutions

2024

1. Continue messing with my recipes. I have a pretty reliable Saison/Grisette base with wheat and strisselspalt, but I haven’t made a wild ale better than Tilquin Quetsche yet. And I haven’t settled on go-to stout/porter/dark ale yet.

Partially completed: I got two more long-term, mixed-ferm batches aged on local plums this year. Still no go-to recipe for dark ales.

2. Successfully transplant my brewing hardware back across country, and really dial-in my process for my now standard 10-liter batch size.

Partially completed: I’m still fiddling with process…

3. Continue improving my non-beer fermentations (Mead, Cider) and non-alcoholic fermentations (kombucha, hot sauce, kimchi, etc).

Partially completed: I’m still having trouble with mold in my fermenting peppers.

2025

1. Keep iterating my mixed-ferm farmhouses. Maybe try to collect a local culture from the land we bought this past summer.
2. Spend a little more effort on dark beers.
3. Keep working on my Thanksgiving (cranberry blonde / wheat) and Christmas (dark & spicy winter warmer) beers.
