Beer-Candied Bacon

Sweet sweet mother of God.  This looks amazing.  I am picking up some bacon on the way home tomorrow.  Kind of thinking I really should have some bacon on hand at all times anyway.

You’re a step behind me.  I have bacon in the fridge and WILL be making this tomorrow night or Saturday.

I had chocolate covered bacon last weekend, made with unsweetened chocolate - I thought it was terrible.  What a way to ruin bacon.

Yikes… I’m cringing at the thought of that. Might as well mix in some ground hop pellets while you’re at it. I do enjoy a top-end 99-100% cacao dark chocolate from time to time, but that does seem like a great way to ruin some good bacon.

But with a good dark chocolate in the 50-70% cacao range it is one of the pinnacles of gluttony.

I made bacon ice cream years ago and used candied bacon so it would stay crunchy. This might just push that over the edge.

Well the chocolate covered bacon I had was utterly disgusting. The bacon was burnt and soggy. The chocolate dark and greasy. Not what I expected. :stuck_out_tongue:

Went to a food & beer pairing diner tuesday. The desert was a Chocolate stout brownie that had a piece
of bacon dipped in chocolate on top. It was a semi-sweet chocolate and the bacon was much better than the brownie.

I’ve had it with dark chocolate, and I came to the same conclusion.  To me, the flavors don’t play well together.  I don’t like black IPA’s for the same reason.

How does one wait for one hour before eating such a delicious treat???

The molten layer of burning (hot candy sugar) should help.

I made this the other day.  When I showed it to my wife, I swear she teared up.  I tried to figure out if the tears were from the sheer beauty of candied bacon or from the feeling of jealousy caused by me declaring it the most beautiful thing I have ever seen…but then it really didn’t matter….I had candied bacon to eat.

Seriously, I used Schlenkerla marzen on thick cut bacon and we both loved it.  Thanks for posting! Crappy image from my phone:
