Black IPA

Here’s my first stab at a black IPA recipe. My biggest question is the grain bill… whatcha think?

Batch = 5.5
OG = 1.070
60 minute mash @ 150

90% Two-Row Pale Malt = 13 lb
5% Caramel/Crystal 60L = 13 oz
5% Carafa III = 14 oz

FWH = 1 oz Chinook and 1 oz Simcoe
60 minute = 2 oz Columbus
30 minute = 1 oz Chinook
10 minute = 1 oz Simcoe, 1 oz Galaxy, 1 oz Centennial
0 minute = 1 oz Simcoe, 1 oz Galaxy, 1 oz Centennial
Dry Hop = 2 oz Simcoe, 2 oz Galaxy, 2 oz Centennial

White Labs 007 Dry English Ale

I like it Frank.  Like the hop schedule - that’s a good combo. The only thing different I do is to add 3 or 4 oz of chocolate malt, for a slight roastiness. But I think you’ll be happy.

Thanks, Jon. I was pondering adding chocolate malt to the recipe. Would you include it in the mash or add at sparge or something else?

Doesn’t really matter.  I would just keep it with the Carafa. You’ll have to post on how it turns out !

Will do. This one probably won’t be brewed until late January or early February. I have that hoppy pilsner coming up on the 10th, and doing a 10 gallon batch of my Good Morning Stout on the 20th. So this will be after them.

Are you using software to build your recipe? Do you have an estimated SRM?

No software. I do it the old fashioned way. I don’t really shoot for any specific SRM… Just as long as it is blackish  :stuck_out_tongue:

Right on, I wasn’t going to suggest a specific number. More just wondering if it would be dark enough for you.
I’m sure it will be fine and I really like the hop bill.

I’m going to add the 4 oz of chocolate malt that Jon suggested.

I’m thinking you want the Carafa III special (i.e., dehusked), right? I made that mistake once and ended up turning an Amber into a Brown Ale. Most Black IPA recipes usually use a dehusked roast malt like Carafa Special or Midnight Wheat for color with minimal flavor. Then if you want to dial in some roastiness, that’s what your chocolate malt is for.

I have Weyermann Dehusked Carafa III…that’s what the label says anyways.

I’m going to bump this brew up to this weekend since my pilsner yeast won’t be ready in time. I currently have an all Zythos IPA fermenting with WLP007. I will rack that to a secondary and use that yeast cake for this brew. I’m really looking forward to brewing this batch since it will be the first black IPA under my belt.

I brewed this today. All and all I think it was a pretty successful brew day. I missed my target gravity of 1.070 and hit 1.066. I’ll take it. That’s still a pretty solid number. Aside from thus being my first black IPA, there were a couple other firsts today. Crazy enough, this was the first time things lined up to pitch onto an existing yeast cake. I picked up a bottle of scotch last night so we had our first hot scotchies!

It’ll come out good anyway. Hot scotchy is pretty tasty, huh?  I’m brewing in the a.m., so I’ll be having one.

Not too shabby. It is definitely better hot. As it cooled, it wasn’t as good. This will become a regular practice at Mader Brew Works… At least in the winter months anyways.

Ok… Just tapped this keg… This is one dandy brew! This hop combination is stellar! It’s certainly hop forward with a touch if roastedness sneaking in in the back end if it. One thing that I did that might not have been necessary was add an ounce each of Simcoe and galaxy to the keg. I mean, it’s just more aroma, so it’s not going to kill anybody lol. Definitely a rebrew!

How black is it? It seems that I have to use close to 3/4# of carafa III or midnight wheat to get mine dark enough…in addition to crystal 60.

EDIT: Forget it. I see that you have 14 oz in there…probably plenty dark enough.

It’s about this black lol. It’s black as night. I was worried it wouldn’t be dark enough when I poured the first pint. It was milky brown, but that was just the sediment in the keg. We’re good now. I actually thought about entering this into the NHC, but I don’t have time in the spring for a rebrew… Or at least it would have been tight with everything I got going on.
