Cascadian Dark Ales

I’ve brewed this recipe a couple of times. It’s one of my favorites…

Batch = 5.5
OG = 1.070
60 minute mash @ 150

90% Two-Row Pale Malt = 13 lb
5% Caramel/Crystal 60L = 13 oz
5% Carafa III = 14 oz
Chocolate Malt = 4 oz

FWH = 1 oz Chinook and 1 oz Simcoe
60 minute = 2 oz Columbus
30 minute = 1 oz Chinook
10 minute = 1 oz Simcoe, 1 oz Galaxy, 1 oz Centennial, 1/2 oz Chinook
0 minute = 1 oz Simcoe, 1 oz Galaxy, 1 oz Centennial, 1/2 oz Chinook
Dry Hop = 2 oz Simcoe, 2 oz Galaxy, 2 oz Centennial, 1 oz Chinook

WLP 007 Dry English Ale or WLP 001 Cali Ale (I’ve done both… Both work well)

Looks great, Frank. I use Midnight Wheat but Carafa III works great, too.  And I use 2 -3 oz chocolate normally, so you’re pretty much there - I wouldn’t go over 4 oz though. Hop schedule looks spot on, good combo too. You’re gonna love this one !

Lol thanks… I edited this post. It was copied from a similar post of mine from over a year ago… Didn’t mean to leave the “first stab” line in it. I corrected the recipe to how I’ve changed over a couple brews. You helped me with my critiquing of it back then haha. Was just sharing probably a top 3-5 recipe of mine.

That’s a good recipe. Really close to mine.  And like standard IPAs, it’s fun to play around with hop combos and schedules.
