Brought 2 5 gallon buckets of plums home tonight right off the tree, I’m a hard Apple cider maker from store bought juice so if anyone has some recipes I would be greatly appreciative.

You can get some honey and make plum mead.
This might be the best option. I’m not sure the brix on the plum juice, but if I had to guess I think you’d need to add sugar of some sort if you’re going the fruit wine route.
I’d be tempted to use it in a dubbel with a pitch built up from a Unibroue beer or WY1762.
Id like to do a 6-8% beverage. My questions are about boiling , when to do it and if I should grind up the fruit or just let it be after taking out the seed?
If your looking to make straight plum wine you would probably pit the fruit, add boiling water to kill wild yeast, add sugar, and when cool add pectin enzyme and acid. You probably want a recipe to get the gravity you want.
