Last June i brewed a sort of “summer pale” (a bit of wheat and oats, simcoe and summer hops, english yeast) that had great success.
My problem is that now, 3 months later, the beer is realy darker like purple-ized. It only affects some bottles, others are OK, and in the affected bottles the yeast slury is realy purple!
Here are some pictures:
Normal color:
Changed color:
Slury:
It doesn’t taste like infected, no acidity at all. It is just a little astringeant and hops flavor and aroma are lower than “normal” bottles.
Oxydation: A pre-botling oxydation would affect all the bottles. The whole batch is bottled the same way, so all bottles would be affected. Post-bottling oxydation??
Sanitation process failure: I use to wash my bottles directly after pouring, so they are quite clean. Then just before bottling I sanitize the bottles with Chemipro Oxi (sodium percarbonate) and have never had any problem with it. Admitting some bottles have been unsufficiently sanitized… what could cause this coloration??
I had that happen to exactly one bottle in one batch four or five years ago. All beers were a nice blonde color and then I opened one and it was straight pink. People I’ve told this to insisted somebody added food coloring to the bottle when I wasn’t looking but nobody else was in the house when I bottled and I opened the bottle myself.
Seriously, I have no clue. I can tell you it wasn’t the Greys. I asked and they swear they were never in your house. They did say the cookies were good.
