denny's favorite 50 in a maris otter and amarillo/simcoe beer?

going to move this over to secondary on sunday morning and put it on three ounces of hops, amarillo, citra & simcoe and then i’m cleaning out last years ingredients and brewing a double ipa to put on this yeast cake…

beer name is (heh), suck my dipa

4 lbs extra light dry extract @ 60
3 lbs extra light dry extract @ 5
3 lbs maris otter liquid extract @ 5

.25 oz amarillo @ 30
.25 oz amarillo @ 20
.5 oz amarillo @ 5
.25 oz simcoe @ 30
.25 oz simcoe @ 20
.5 oz simcoe @ 5
.25 oz centennial @ 30
.25 oz centennial @ 20
.5 oz centennial @ 5
.5 oz citra @ 30
1 oz citra @ 20
1 oz citra @ 5

dry hops will be an ounce each of amarillo, citra & simcoe

iirc, it’s about 100 ibu and 8.5%

I’d put some table sugar in that - otherwise you might end up with a DIPA/Barleywine tweener.

how much would you add?  would honey be a viable alternative?

off the top of my head, I’d say replace a pound of extract with a pound of sugar.  Honey would definitely work as well.

what about just adding in a pound of sugar in additon to?  would that work?

well yeah- its just your gravity is going to be higher and thus your ABV - your call if you want that  :wink:

I would go with replacing though - I’ve had only one or two DIPAs over 9% that were good - seems to be the threshold for me at least where the booze starts overpowering the hops (since the malt presence should be minimal).

Maharaja, to me, was better when it was in the low 9s years ago.

Sean can check me on this but I think what he said in regards to this was that for every point OG added from simple sugars you can subtract .4 points from the FG, so if without the sugar you are looking at at FG say 1.020 1 lb of sugar added without removing any extract would add about ~6 points to the OG and reduce the FG by about ~3 points so 1.017, still pretty thick but you might get better attentuation than that.

correct - I would rather replace since I’m more worried about it being sweet - Ruination, Pliny, Maharaja, etc. all finish in the 10-14 range give or take.  You’ll want that to get the most hop expression possible.

I’d want to target 15 as the FG and if you get lower, great!

regarding the hop additions of the beer i’m brewing sunday…  i can’t seem to find the thread on here about doing mostly late hop additions…

is starting at 30 to late in the boil?

you mean no bittering charge at all?

When I am late hopping a brew I put some FWH and/or a small 60 minute and then load up at 10, 5, 0, and DH

i can’t remember where i read it, but yes, it seems all the hops were added at 30 and later.

maybe i better get back in beersmith and make some adjustments.

Wow, you’re at 1.020 and it’s still active? That’s a good sign.

still looks active as heck, but i’m still at 1.020.  i’m beginning to think i have a stuck fermentation, but i don’t know if the activity negates that thought.

From my experience, WY1450 is a bit slow (okay, very slow) during it’s first generation. I’ve had IPAs in the primary for six weeks while using a first generation strain. After that first gen though, it picks up a bit.

i took the gravity of my dipa today.  it would be second generation.  seven days since i brewed and it’s at 1.021.  OG was 1.080.

both of these beers turned out great.  the first beer is exceptionally good.
