I made a killer wing sauce last night and actually had it with some blackened chicken I made. What does everyone else do?
Texas pete hot sauce (1/2 cup to 1 cup)
Garlic Powder
Onion Powder
Black Pepper
Cyenne Pepper
Dash of salt
Mix ingredients in a sauce pan and add some butter to thicken it.
In about a cup I use a tbsp of each. I didn’t put specific measurements because you can season to taste. I added a lot more black and cyenne pepper last night and it was pretty spicy.
I would like to add some beer as well, but i’m not sure what would go with it.
I use Frank’s and butter as a base, then add different seasonings to taste. My list is similar to yours, I’ve also added some ground chile peppers, white pepper, szechuan pepper, and other random stuff I decide sounds good at the moment. I’ve also used tomato paste and/or corn starch to thicken it up more, but I like it pretty thick.
I haven’t tried beer, but I would cook it down a lot first so the sauce stays nice and sticky.
I also use Frank’s Red Hot and butter 50/50. I like to boost the heat and flavor a bit with some habanero pepper sauce and varying spices to enhance flavor.
1 small can of coconut milk (regular, not light)
a couple dashes of Thai fish sauce
very finely chopped red chile or dry chile flakes
red curry paste to taste (optional)
very finely chopped garlic
very finely grated ginger root
soy sauce
bit of sesame oil
brown sugar (about as much would fit into the coconut milk can)
rice wine vinegar
Bring it all up to a boil in a small sauce pan
finely chopped fresh cilantro and basil added right at the end
sirachi chili paste to taste (or whatever hot sauce you like)
