I realized this morning that I only boiled about about a half a gallon over an hour. I never really do a full rolling boil, but it is boiling. I haven’t measured OG yet, but I’m curious if I should boil harder in the future, or stay the course and just adjust the expected boil off rates in Beersmith?
Low boil off rates are not a problem. Picobrew only gets wort to 207F but even simmering at that temp is said to be okay.
DMS is a risk with a low evaporation rate, but it seems that finding DMS in beer is pretty rare.
What was the original boil volume?
Because it recirculates constantly, mimicking a rolling boil.
