Hi. I’m new to this forum but I’ve been brewing for about 20 years on and off. I took an almost 2 year hiatus due to life getting in the way but i dusted off my equipment and am ready to get back to it

I recently brewed my Dunkleweizen recipe here with a friend who owns a brewery in Cocoa Florida and it will be on tap in the next week or so. We brew it every year when my wife and I come to FL for several months. One thing I learned from brewing it here, boil it for 90 minutes (which was my original boil time when I first brewed it). It helps caramelize some of the wort that improves the taste of the beer. I had switched to a 60 minute boil at home to cut the length of the brew day and can really see the difference an extra 30 minutes makes.

I tend to do a 90min boil on anything dark for just this reason.
