I recently brewed my Dunkleweizen recipe here with a friend who owns a brewery in Cocoa Florida and it will be on tap in the next week or so. We brew it every year when my wife and I come to FL for several months. One thing I learned from brewing it here, boil it for 90 minutes (which was my original boil time when I first brewed it). It helps caramelize some of the wort that improves the taste of the beer. I had switched to a 60 minute boil at home to cut the length of the brew day and can really see the difference an extra 30 minutes makes.

I tend to do a 90min boil on anything dark for just this reason.

That is actually a pretty accurate rendition of me getting going.
Fairly accurate representation of the way that some how I’m always wearing black when I mill and mash in. sigh
